Healthy Recipe of the Week: Hummus and Roasted Veggie Pizza


1 corn tortilla

1 handful of vegetables of your choice
2 tablespoons hummus (pick your flavor)
1 tablespoon olive oil
1 clove of garlic (minced)
1 pinch salt
Goat Cheese (use as desired)


1. Roast vegetables you’ve selected for about 20 minutes at 350 degrees with olive
oil, garlic, salt and pepper.

2. Top your corn tortilla with hummus. Add the roasted vegetables and goat cheese.

3. Bake for about 10 minutes at 350 degrees.
